I had three weeks in Mexico and left already two and a half weeks ago and still I haven't done a single post about it... Lazy, that's what I call that so here we go, felt I had to to write at least something and sorry to be repetitive but this will be another one about food. But as you know, food is one of the best things in life!!! This time I will tell you what to eat, not where to eat when not eating tacos in Mexico.
Breakfast is one thing that I certainly have been taking seriously this year. Maybe not so much if you look on the healthy side of what I'm actually eating but more on how long I spend eating breakfast. Unless I have an activity planned on the day such as diving, hiking or what ever then I easily spend two hours enjoying a slow breakfast. Drink of choice with my breakfast is a large iced americano with lot's of ice, no sugar or milk... By the way, you would think that I sleep in late because I don't work but truth is that I'm most of the time out of bed around 8 AM... Here are some of my favorite breakfast options in Palawan.

Some days I feel like I left yesterday and some days I feel like I've been gone forever. I had my ups and downs but the ups have definitive been more then the downs. Here's a small insight on the year that's been and what my "near future" plan is...
